The preservation of quality characteristics of Extra Virgin Olive Oil over time (shelf-life) is closely linked to oxidation phenomena whose extent and dynamics depend on a complex set of factors that together define storage conditions. Recent research by the University of Florence - Department of Economics, Engineering, Agricultural and Forestry Sciences and Technologies (DEISTAF) and the Chemical-Commodity Laboratory - Special Agency of the Florence Chamber of Commerce, commissioned by IPAC SpA – a Tuscan company that produced, patented and introduced the first 18/10 stainless steel food-grade bottle to the market – confirms a significant qualitative advantage of storing Extra Virgin Olive Oil in Olipac.
The advantage of this new packaging solution allows for longer preservation of a higher concentration of antioxidant phenolic compounds, reduction of the degree of oxidation, and maintenance of positive sensory characteristics (fruitiness) while simultaneously decreasing the appearance of defects related to oxidation phenomena.
This evidence translates into a substantial extension of a product's life during storage.
Sustainability
Olipac is also a container aligned with ecological sustainability: stainless steel is hygienic, perfectly neutral towards food, easy to clean, unbreakable, has a self-regenerating surface and is one of the most recycled materials (indefinitely) in the world.
